Hi, Has anyone got a recipe from Edmunds cookbook - for Chocolate cake, with only 1 Egg.Edmunds Cookbook. Chocolate cake with 1 Egg recipe?
One Egg Chocolate Sponge from Edmonds Cookery Book
50g butter (2oz)
1 dessertspoon golden syrup (10ml)
1 egg
1/2 cup sugar
1 tablespoon Bournville Cocoa
1 cup flour
1 teaspoon Edmonds baking powder
A few drops of vanilla essence
3/4 cup milk
1 teaspoon bicard soda
Melt butter and syrup, add egg and sugar, beat well; then flour, cocoa and baking powder previously sifted together. Add vanilla essence and lastly bicarb soda dissolved in the milk. Bake 30 to 40 minutes at 190 Celsius (375 F).Edmunds Cookbook. Chocolate cake with 1 Egg recipe?
Here's a one egg cake recipe that has a number of variations:
One-Egg Cake Recipe
1/4 Cup Shortening (or butter)
2/3 Cup Sugar
1 Egg
1 Teaspoon Vanilla Flavoring (or real vanilla)
1 1/2 Cups Flour
1/4 Teaspoon Salt
2 Teaspoons Baking Powder
1/2 Cup Milk
Cream shortening and sugar. Add unbeaten egg. Add flavoring. Beat thoroughly. Sift flour, measure, and sift with salt and baking powder. Add alternatively with milk to creamed shortening and sugar. Pour into well-oiled loaf pan. Bake in moderate oven (375 F.) 35 minutes.
Chocolate Cake
Prepare one-egg cake batter. Melt 1 square of unsweetened chocolate over hot water. Add to creamed shortening, sugar and well-beaten egg. Complete recipe in manner indicated.

My '86 one calls for 3 for regular baking and one for the MW recipe.
50g Butter
2t Golden Syrup
1 Egg
1/2C Sugar
1C Flour
2T Cocoa
1/2t Edmonds Baking Powder
3/4t Baking Soda
1t Vanilla Essence
Melt butter and golden syrup, 45 seconds on high.
Mix in sugar then egg
Add flour, cocoa, baking powder, soda dissolved in milk and vanilla
Mix with spoon, pressing out lumps
Pour into 20cm ring mould and cover with waxed paper.and MW on high for about 4 minutes
Cool on a rack.
Ice with chocotate icing
I have one from American Cooking/ 1986... one egg. bar type cookie cake/ to many'; edmunds online, my stack of cook books is vast but, not knowing if u need wheat free..., new zealand,,,, or what ,limits me a bit................if u want this receipe,pls post again ... interested in all types of cooking, books.. etc.............
