Any good recipes for salmon cakes?

Here is one from England, my grandpa brought back from World War ll





Salmon Fishcakes





English Recipe for Salmon fishcakes, I got from my Granny, my Grandpa brought this back from the war.








1 1/2 to 2 cups left-over cold mashed potato


15 Oz can of salmon


1 tablespoon unsalted butter, melted


fat pinch cayenne pepper


grated zest of 1/2 lemon


salt %26amp; pepper to taste


1 egg





Optional


Add to the mixture





Saut茅 (in butter) 1/4 cup total of finely chopped red onion


and finely chopped sauteed, red bell pepper


1 /8 teaspoon garlic powder


1/4 teaspoon dried dill weed


1/4 teaspoon celery salt








Mix together all of above.





Mould into approx. 7-9 patties, and put onto a baking lined with wax paper or Alum foil,


and refrigerate for at least 20mins.





2 eggs


7 tablespoons matzo meal (or white bread crumbs)


3 1/2 Tablespoons of unsalted butter


2 tablespoons vegetable oil





Beat eggs in shallow bowl and sprinkle matzo onto plate. One by one dip


fishcakes into egg and then matzo, sprinkling to cover entire surface.





Put butter and oil into pan, heat until it begins to fizzle and then


fry fishcakes on each side until crusts are just golden and the centres

Salmon Cakes


Ingredients:


1-1/2 (14.75 ounce) cans salmon, undrained


and flaked


1-1/2 slices bread, shredded


1-1/2 small onion, grated


1 tablespoon and 1-1/2 teaspoons all -purpose flour


1-1/2 egg


salt and pepper to taste


1-1/2 cups vegetable oil for frying





Directions:


You have scaled this recipe's ingredients to yield a new amount (6). The directions below still refer to the original recipe yield (4).


1. Mix together salmon, bread, onion, all-purpose flour, egg, salt and pepper. Shape into four patties.


2. In a large skillet heat oil over high heat. Cook the patties until browned on both sides, about 8 minutes. Drain briefly on paper towels before serving.Any good recipes for salmon cakes?
Here is my favorite using fresh (not canned) salmon; easy %26amp; tasty too. You can make the lemon yogurt sauce as below, or just serve with tzaziki you buy at the store or BBQ sauce.





Salmon cakes with lemon-yogurt sauce





* 1 pound skinless salmon fillet, cut into 1/2-inch pieces


* 2 (6-inch) pita rounds


* 1/4 cup mayonnaise


* 1 large egg, lightly beaten


* 1/2 teaspoon ground coriander


* 1/4 teaspoon cayenne


* 2 tablespoons chopped chives, divided


* 1 1/2 teaspoon grated lemon zest, divided


* 2 tablespoons olive oil


* 3/4 cup plain whole-milk yogurt


* 1 teaspoon fresh lemon juice








Accompaniment:





* lemon wedges





Preparation





Mix together salmon, pita, mayonnaise, egg, coriander, cayenne, 1 tablespoon chives, 1 teaspoon zest, and 1/2 teaspoon salt. Season with black pepper and form into 4 cakes (4 inches in diameter).





Heat oil in a 12-inch heavy nonstick skillet over medium-high heat until it shimmers. Cook salmon cakes, turning over once, until golden and just cooked through, 6 to 7 minutes total.





Stir together yogurt, lemon juice, 1/4 teaspoon salt, remaining tablespoon chives, and remaining 1/2 teaspoon zest. Serve salmon cakes with sauce.
Cajun Salmon cakes





Aioli:


2 tablespoons fat-free mayonnaise


2 teaspoons fresh lemon juice


1/4 teaspoon bottled minced garlic





Cakes:


3 (6-ounce) cans skinless, boneless pink salmon in water, drained


1/4 cup sliced green onions


1/4 cup fat-free mayonnaise


2 tablespoons dry breadcrumbs


1 teaspoon Cajun seasoning blend


2 teaspoons Dijon mustard


1/2 cup dry breadcrumbs


1 tablespoon canola oil





To prepare aioli, combine first 3 ingredients in a small bowl; set aside.





To prepare cakes, combine salmon and next 5 ingredients (through mustard) in a medium bowl. Divide salmon mixture into 8 equal portions, shaping each portion into a (1/2-inch-thick) patty. Dredge patties in 1/2 cup breadcrumbs.





Heat oil in a large nonstick skillet over medium-high heat. Place patties in pan; cook 3 minutes on each side or until lightly browned and heated through. Serve aioli over salmon

I have made several and have them in my personal recipe file , but this one is the one made repeatedly .





Wisconsin Salmon Patties





1 can salmon , drained


3/4 c. bread crumbs or cracker crumbs


1/4 c. green onion , sliced


1/2 tsp. ground mustard


2 tbsp. pimentos , chopped


1.4 c. green pepper , finely diced


2 tsp. horseradish


1 egg


1/2 c. low fat milk


1/2 tsp. lemon or lime peel grated


In large bowl mix together salmon , bread crumbs , onion , ground mustard pimento , pepper and horseradish . In small bowl combine egg , milk and peel . Stir into salmon mixture . With floured hands shape ito 4 inch patties . In large skillet place butter or oil ( I like canola ) . Fry patties a few at a time until golden on both sides . Yum


If I have some I will put some shredded chedder in with the mix .
