Banana cake / slice recipe...?

Hi, I am wanting to make a cake, but in a slice tin so that I can cut thin flat pieces for lunches. I wanted to make a banana cake, but not sure what quantities to use. Any recipe suggestions?

Banana Slices Ingredients





pinch salt


3 oz butter


1 egg slightly beaten


1 3/4 cups plain flour


3 oz chocolate pieces


1 ripe banana mashed


1/2 tsp vanilla essence


1/2 cup chopped walnuts


1/2 cup light brown sugar


1 1/2 level tsp baking powder





Banana Slices Method





In a bowl cream the butter with the brown sugar until light and fluffy then add the egg blending well then beat in the mashed banana. In another bowl sift the flour with the baking powder and salt then blend into the creamed mixture and add the vanilla, walnuts and chocolate pieces and mix well. Spread the mixture into a well greased 11 x 7 inch shallow tray and bake at 350 degrees for about 30 minutes. While still warm cut the mixture into slices and allow the Banana Slices to cool in the tray.

Banana Slice


Ingredients:


1 cup processed bran breakfast cereal


1 cup milk


25 g polyunsaturated margarine


1 cup wholemeal self raising flour


1/4 cup sugar


2 eggs, lightly beaten


3 ripe bananas, mashed





Method:


1. Combine cereal and milk and stand for 15 minutes.


2. Combine flour and sugar in a bowl.


3. Rub in margarine with fingertips until the mixture resembles breadcrumbs.


4. Add eggs, bran mixture and bananas and stir until just combined.


5. Pour mixture into a lamington tin. Bake at 200潞C for 20 minutes or until cooked when tested with a skewer. Cool and slice into small squares.








Banana Loaf





Ingredients:





1 cup self raising flour


Pinch of salt


1/4 tsp of bi-carb soda


1/4 cup of milk


1 egg beaten


1/2 tsp baking powder


3/4 cup caster sugar


60g butter


1/3 cup mashed banana


1/2 tsp cinnamon


1/2 tsp nutmeg





Method:


Sift dry ingredients.


Melt butter.


Mix the egg, milk, butter and banana.


Stir into the dry ingredients.


Grease a lamington pan and bake for 25 - 30 minutes in a moderate oven.

INGREDIENTS:





2 1/2 cups all-purpose flour


1 tablespoon baking soda


1 pinch salt


1/2 cup unsalted butter


1 cup white sugar


3/4 cup light brown sugar


2 eggs


4 ripe bananas, mashed


2/3 cup buttermilk


1/2 cup chopped walnuts





DIRECTIONS:





Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 8 inch round pans. In a small bowl, whisk together flour, soda and salt; set aside.





In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts. Pour batter into the prepared pans.





Bake in the preheated oven for 30 minutes. Remove from oven, and place on a damp tea towel to cool.
