Well there's this one, a choc mudcake recipe:

125g (4 ounces) soft margarine

1 cup castor sugar

1 teaspoon (5ml) vanilla essence

1/2 cup cocoa

1/2 cup hot water

2 teaspoons (10ml) fresh lemon juice

1 cup milk

1 3/4 cups plain flour

1 teaspoon baking powder

1 teaspoon bicarbonate of soda

1. Cream margarine, sugar and vanilla until light and fluffy. Blend the cocoa in the hot water and gradually add to the marg/sugar mixture.

2. add the lemon juice to the milk to sour it.

3. Sift the flour, baking powder, bicarbonate of soda and add it to the creamed mixture alternately with the soured milk. Mix thoroughly.

4. spoon the cake mixture into greased and floured 8'; cake pan and bake in a moderate oven (180 deg. C) for 30-40 minutes or until the top springs back when lightly pressed.

5. Allow the cake to cool in the tin for 10 minutes. Turn out and allow to cool before icing.

Or for a plain cake try:

2 1/2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 (14 ounce) can sweetened condensed milk

1 cup orange juice

2 teaspoons vanilla extract

1 cup melted butter

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

Sift together the flour, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.

Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Be warned, you might want to make a test cake first though, as I haven't tested these recipes and I can't vouch for them. Hope this helps :)Looking for recipe for baby's first birthday cake that has no eggwhites?
I think you can use ground flax seed mixed with water in place of eggs
