Does anyone know any good recipes for apple cakes?

Here is a recipe for an upside down apple cake.








1/3 cup butter, cut up


1/3 cup packed brown sugar


6 very small red cooking apples (1-1/4 to 1-1/2 lb.), halved, stems removed, cored


1-1/3 cups all-purpose flour


2/3 cup granulated sugar


2 tsp. baking powder


1 tsp. ground ginger


1 tsp. ground cinnamon


2/3 cup milk


1/4 cup butter, softened


1 egg


1 tsp. vanilla


Vanilla ice cream (optional)


Directions


1. Preheat oven to 350F. Place 1/3 cup butter in a 9x9x2-inch baking pan. Place in oven 5 minutes or until butter melts. Sprinkle brown sugar over butter; stir. Arrange 9 apple halves in mixture, cut sides down. Bake in oven 10 to 15 minutes or until bubbly.





2. Meanwhile, peel remaining apples. Coarsely shred; set aside. In bowl combine flour, granulated sugar, baking powder, ginger, and cinnamon. Add shredded apple, milk, 1/4 cup butter, egg, and vanilla. Beat with electric mixer on low until combined; beat on medium 1 minute. Spoon over apples, spread evenly (apple may be exposed; some butter may come to surface).





3. Bake 35 minutes or until wooden toothpick inserted near center comes out clean. Cool in pan on wire rack for 5 minutes. Loosen edges; invert onto platter. Spoon any topping in pan over top. Cool 20 minutes; serve with ice cream

i like this one for an apple coffee cake. its not very sweet but sometimes i drizzle caramel over it and eat it with ice cream to make it that way i also sometimes add brown sugar to the top i like it with any kind of apple almost


1 cup flour


1 teaspoon baking powder


1/2 teaspoon salt


2/3 cup sugar


1 teaspoon ground cinnamon


5 1/2 Tbsp unsalted butter, room temperature


1 egg, beaten


1/2 cup whole milk


1 medium Cortland or other baking apple, peeled and sliced








1 Set the oven to 375掳F. Grease a 9-inch square baking dish with or pie pan a 4-cup capacity.





2 Sift the flour, baking powder, and salt.





3 In a bowl, combine 1/3 a cup of the sugar with the cinnamon, set aside.





4 In the bowl of an electric mixer, cream the butter with the remaining 1/3 cup sugar. Beat in the egg until blended. Add the flour mixture in three additions, alternating with the milk, beating until just combined.





5 Spread half the batter in the baking dish. Lay the apple slices on the batter so they just cover the batter (you may have to overlap some slices). Sprinkle the apples with half of the cinnamon-sugar mixture. Spread the rest of the batter over the apples. Sprinkle the remaining cinnamon-sugar on top.





6 Bake the cake for 25 minutes or until it is golden brown and apples start to bubble at the edges.Does anyone know any good recipes for apple cakes?
1 (18.25 ounce) package yellow cake mix


3 eggs


1 (21 ounce) can and half a can apple pie filling


3/4 cup packed brown sugar


1 tablespoon all-purpose flour


1 tablespoon butter


1 teaspoon ground cinnamon


1 cup chopped walnuts





Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.


In a large bowl, mix together the cake mix, eggs and apple pie filling. Pour into the prepared pan. Combine the brown sugar, flour, butter, cinnamon and walnuts. Sprinkle over the top of the batter.


Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.


Serves 24.

Apple Coffee Cake





Ingredients


2 apples (diced)


2 teaspoons ground cinnamon


2 large eggs


200 ml vegetable oil


62.5 ml brewed coffee


1.5 teaspoons Rum extract





300g plain flour (shifted)


220g caster brown sugar


2 teaspoons baking soda


1 teaspoon salt


150g Raisins and roasted almonds





Action


a. Mix apples and cinnamon powder, in a mixing bowl.


b. Add eggs, oil, coffee, and rum, mix lightly.


c. Add the rest gradually in, and mix well.


d. Preheat oven at 180掳C.


e. Butter the 24 cm round baking tray.


f. Pour them in the baking tray, and bake for 1 hour.


(cake tester comes out clean)

1/2 teaspoon salt


1 cup (2 sticks) unsalted butter or margarine, softened


1 3/4 cups sugar


3 large eggs, separated


1/2 cup milk


8 medium (about 3 pounds) cooking apples,cored and diced (peeling is optional)


-----Glaze (optional):-----


1 cup confectioners' sugar, or 1/2 cup confectioners' sugar and 1/2 cup light brown sugar


1/2 teaspoon vanilla or almond extract


1 to 2 tablespoons milk or water


Preheat the oven to 350掳F. Grease a kugelhopf or 10-inch Bundt pan.Sift together the flour, baking powder, and salt. Beat the butter until smooth, about 1 minute. Gradually add the sugar and beat until light and fluffy, about 4 minutes. Beat in the egg yolks, one at a time. Stir in the flour mixture and milk.


Beat the egg whites on low speed until foamy, about 30 seconds. Increase the speed to high and beat until stiff but not dry. Fold one-fourth of the whites into the batter, then gently fold in the remaining whites.Pour half of the batter into the prepared pan. Spread with half of the apples. Top with the remaining batter, then the remaining apples.Bake until golden brown, 50 to 60 minutes. Let cool in the pan for 20 minutes, then transfer to a rack and let cool completely.-----To make the glaze if using: Combine all the glaze ingredients, stirring until smooth and of pouring consistency. Drizzle over the cake and let stand until set.


******Caramel Apple Cake with Caramel Topping


1 cup light brown sugar, firmly packed


1/2 cup vegetable oil


2 teaspoons ground cinnamon


1 tablespoon vanilla


2 large eggs


1/4 cup milk


1 3/4 cups all-purpose flour


1 tablespoon baking powder


1/2 teaspoon salt


2 medium tart apples, peeled, cored and coarsely chopped


Caramel Topping, heated


In a mixing bowl with electric mixer, beat together sugar, oil, cinnamon, and vanilla. Add eggs one at a time, beating well after each addition. Mix in the milk, flour, baking powder, and salt, stirring just until blended. Stir in apples.Pour apple cake batter into a greased 9-inch square pan. Bake at 350掳 until cake springs back when touched lightly in the center, about 30 to 40 minutes. With a fork, pierce cake all over. Pour hot caramel topping over cake. Serve warm or at room temperature with a dollop of sweetened whipped cream or whipped topping.

1/2 cup light brown sugar, packed


1/4 cup butter


1/4 cup heavy cream


1 teaspoon vanilla


Combine brown sugar, butter, and cream in a heavy saucepan over medium heat; bring to a boil. Reduce heat to a simmer; continue cooking and stirring for 5 minutes. Remove from heat and stir in vanilla. Pour caramel topping over hot apple cake.

3 cups of apples, peeled and chopped


1/2 cup of water


1 cup of brown sugar, packed, divided


2 cups sifted flour


1 teaspoon of baking powder


1 teaspoon of baking soda


1 teaspoon of salt


1 teaspoon of cinnamon


1/2 teaspoon of allspice


1 cup of oatmeal


1/2 cup of seedless raisins


1/2 cup of chopped pecans


2 eggs, beaten


1/4 cup of melted shortening or oil


Combine the chopped apples, water and 1/2 cup of the brown sugar. Cook for about 5 minutes or until the apples are almost tender and then cool. In a mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, allspice, oatmeal, raisins, and pecans; stir in the cooled apple mixture, eggs, remaining brown sugar, and the oil. Mix together until just moistened. Bake in a 10-inch tube pan for about 40 minutes at 350掳. Cool for about 10 minutes before removing for the pan. Serve the bread warm or cold. The bread may be lightly frosted with a mixture of 1 cup powdered sugar and 2 or 3 teaspoons of warm water.

******Cinnamon-Apple Cake


1 3/4 cups sugar, divided


1/2 cup stick margarine, softened


1 teaspoon vanilla extract


6 ounces block-style fat-free cream cheese, softened (about 3/4 cup)


2 large eggs


1 1/2 cups all-purpose flour


1 1/2 teaspoons baking powder


1/4 teaspoon salt


2 teaspoons ground cinnamon


3 cups chopped peeled Rome apple (about 2 large)


Cooking spray


Preheat oven to 350掳.Beat 1 1/2 cups sugar, margarine, vanilla, and cream cheese at medium speed of a mixer until well-blended (about 4 minutes). Add eggs, 1 at a time, beating well after each addition. Combine flour, baking powder, and salt. Add flour mixture to creamed mixture, beating at low speed until blended.Combine 1/4 cup sugar and cinnamon. Combine 2 tablespoons cinnamon mixture and apple in a bowl, and stir apple mixture into batter. Pour batter into an 8-inch springform pan coated with cooking spray, and sprinkle with remaining cinnamon mixture.Bake at 350掳 for 1 hour and 15 minutes or until the cake pulls away from the sides of the pan. Cool the cake completely on a wire rack, and cut using a serrated knife.
