My Christmas Cake recipe.

It's for an 8'; round cake, so get a mathematician working on it, and they are ALL imperial, not US measures.

You can (indeed should) make it 3 months in advance

6oz butter

6 oz soft brown sugar

1 tablespoon black treacle

4 eggs

7 oz plain flour

1 teaspoon ground mixed spice

1/2 teaspoon cinnamon

9 oz currants

6 oz sultanas

5 oz raisins

(You can soak the vine fruits in 1 tablespoon of rum or brandy overnight)

3 oz glace cherries quartered

2 1/2 oz chopped mixed peel

2 oz blanched chopped almonds

2 1/2 oz ground almonds

grated rind of 1 lemon

Cream butter, sugar and treacle

Beat in eggs (I add a desert spoon of flour per egg to stop curdling)

Stir in flour

Stir in remaining ingredients

Put in prepared tin

Bake at 150c 300F Gas Mark 2 for about 2 1/2 to 3 hours ( a skewer should come out clean.

When cold, double wrap in aluminium foil and store in a tin. Every two weeks, feed it a tablespoon of brandy.
