Any recipes for healthy cakes?

I need recipes for healthy cake. Preferably vanilla and chocolate.Without nuts/walnuts/pecans etc. Thank you!!Any recipes for healthy cakes?
HEALTHY CHOCOLATE CAKE RECIPE


Grease and base-line a 20cm round, loose-based cake tin. Heat the oven to 350F/180C/gas 4. Sift together 250g (1 1/2 cups) plain flour, 4 tbsp cocoa powder, 250g (1 cup) caster sugar, 1 tsp baking powder, 1 tsp bicarbonate of soda (baking soda) and 1/2 tsp salt. In a separate bowl, mix together 5 tbsp (1/3 cup) of vegetable oil or apple puree, 1 tbsp vinegar, 1 tsp vanilla essence, 250ml (1 cup) warm water. Mix these into the dry ingredients until just amalgamated. Do not over mix. Pour into the prepared tin and bake for 30-35 minutes until the cake has risen and springs back when pressed.





Serve the cake just as it is, or to make it extra special, top with Greek yogurt and raspberries.

Healthy Carrot Cake Recipe





100g/4 oz/1 cup grated/shredded carrots


250g/10 oz/2 1/4 cups self-raising flour


2 tsp ground cinnamon


300g/10 oz/1 1/3 cups demarara sugar


100g/4 oz/1 cup desiccated coconut


100g/4 oz/three-quarters cup sultanas


75g/2 oz/half cup chopped walnuts


2 eggs


1/2 tsp vanilla extract


100g/4 oz/half cup butter, melted


100ml/4 fl oz (scant half cup) vegetable oil

鈥ift flour and cinnamon into a bowl. Stir in the carrots, plus sugar, coconut, sultanas, walnuts.


鈥n another bowl, beat together eggs, vanilla extract, melted butter and oil. Stir this mixture thoroughly into the flour mix.


鈥ut mixture into cake tin and bake for 45-50 minutes until golden and firm to touch. Leave to cool in the tin for 10 minutes, then turn on to a wire rack to cool. Cut into fingers.Any recipes for healthy cakes?

Banana Coconut Upside Down Cake Recipe

Granulated sugar


Sour cream


Egg


Water


Vanilla


Butter


Firmly packed brown sugar


Bananas, ripe and cut in half lengthwise


Maraschino Cherry halves


Flaked coconut











Oven Temp ~ 350掳 Baking Time ~ 30 Min.


Pan Type ~ 9-inch round pan


Preheat oven, put butter in baking pan and place in oven until butter is melted. You can do this while oven is preheating.





Beat baking mix, granulated sugar, sour cream, egg, water and vanilla in large bowl with electric mixer on low speed just until moistened, stopping frequently to scrape side of bowl. Beat on medium speed 2 min.


Sprinkle melted butter evenly with brown sugar. Arrange bananas and cherries on top of brown sugar; sprinkle evenly with coconut. Cover with prepared batter.


Bake until toothpick inserted in center comes out clean. Run small knife around edge of pan to loosen cake; immediately invert onto serving plate. Cool completely.
