I need a good frosting recipe cake that is totally white, can decorate with, wont harden, not too sweet.?

My husband and I are renewing our vows this summer. I dont want to pay hundreds to have a cake made when we are good at making our own and its now an elaborate event. We are making a tiered cake with some decoration so the frosting has be able to hold up to decorating, be very white (our usual recipe isnt), not overly sweet, and also not harden as we obviously have to make it the night before.

I know you didn't ask for a cake recipe, too. But I found this on the internet last year, and we made it for my cousins wedding. NO ONE knew it was a box cake. And the frosting is whiter than white and easy to decorate. This batter is enough for one 12 inch round, one 10 inch round, and one 8 inch round. Or, you can do one 14 inch round, and one 8 inch round. Or a 12X18 inch sheet cake. The cake is very moist and more tasty and moist than most wedding cakes because of the sour cream. (And the cake turns out super white, too!)The recipe actually came from a gal who does wedding cakes for a living!! FYI - You can make the cakes up ahead of time, wrap tightly in saran wrap and freeze before you decorate. There too, before my cousins wedding, we made one 'test' cake a few weeks before and decorated, so we knew what we were doing when the time came for the real deal!!





White Almond Sour Cream Wedding Cake





2 boxes Duncan Hines white cake mix (NOT YELLOW!)


2 cups all-purpose flour


2 cups granulated sugar


1 1/2 teaspoons salt


2 2/3 cups water


1/4 cup vegetable oil


2 teaspoons real vanilla


2 teaspoons almond extract


2 cups sour cream


8 large egg whites, room temperature





Place all dry ingredients in a large mixing bowl and stir together with a wire whisk. Add the remaining ingredients and beat on medium speed for 2 minutes. Pour into greased and floured cake pans, filling each pan about half full. Lightly tap cake pans on counter to bring air bubbles to top. Cut through batter with a toothpick or tip of a knife to break large bubbles. Bake in preheated 325掳 F oven until cake tests done.





Wedding Cake Frosting





1 cup butter


1 cup shortening


1/2 cup milk.


2 tsp. clear vanilla extract


8 cups powdered sugar


couple dashes of salt





Cream the butter and shortening together until smooth, about 15 minutes. Gradually add the sugar, milk and vanilla. Mix until smooth.





We dyed some of this frosting red and green for roses. You can make them on wax paper, and transfer them to the cake. There are many how to videos of this on the internet!I need a good frosting recipe cake that is totally white, can decorate with, wont harden, not too sweet.?

THE CAKE SHOPPE


ICING RECIPE





2 LBS. POWDERED SUGAR (7-8 CUPS)


戮 CUP CRISCO OR SWEETEX


2/3 CUP WATER


陆 TSP. SALT


2 TSP. FLAVORING 鈥?IF USING CLEAR VANILLA THEN ONLY 1 TSP.





WITH A MIXER, CREAM SHORTENING AND SALT WITH FLAVORING. ALTERNATELY ADD POWDERED SUGAR AND WATER.


TRY FOR A FLUFFY TEXTURE.


KEEP COVERED.





Be sure to apply a crumb coat to your cake.

Allow the crumb coat to dry then frost. Smooth the final frosting out with a roller. First roll the roller into some corn starch, then onto the cake top. This will flaten out the frosting so that you have a smooth surface to decorate.

Pro trick; Use Crisco instead of butter
I had the same problem when I made a cake. Here is a perfect recipe thats not over sweet. Avoid using too much powder sugar and use some cheese cream instead. Here is one of the recipes.lt depends on what kind of cake you are making that which frosting you'll need. THE RECIPE AT THE BOTTOM HAS GOTTEN MANY GOOD COMPLIMENTS ON IT!!!!!!!





fluffy lemon buttercream frosting


Ingredients


3 1/2 cups confectioners sugar


1/2 cup of butter (1 stick) softened


1/4 cup of milk


1 t vanilla


1 T lemon zest (the rind of a lemon)


2 T lemon juice





Directions


mix the butter, lemon zest and vanilla together, making sure all the lumps are gone.


add the milk, and quickly cream it into the butter mixture.


by the 1/2 cup, mix in the sugar.


once the sugar is all in the bowl, cream on ';high'; for two minutes. (I use this time to clean up)


mix in lemon juice.


spread on cake; and enjoy!





Rasberry+cream cheese fluffy frosting


Ingredients


1 (8 ounce) cream cheese, room temperature


4 ounces unsalted butter, softened


4 ounces vegetable shortening


1/4 cup seedless raspberry preserves (Flavor can be your choice)


2 tablespoons Chambord raspberry liquor (Use liquor according to preserve flavor)


2 lbs powdered sugar, sifted


food coloring (optional)


Directions


1In a food processor beat cream cheese, butter, and shortening till light and airy. Add preserves and Chambord and pulse till blended.


2Adding the sugar till the cosistancy is where you want. Adding more for decorating and less to make a smooth and creamy frosting or glaze if you prefer.


3Add food coloring if wanted.
