I'm celebrating my birthday with my family in a few weeks, and I wanted to help my Mom make a cake or any type of dessert, either one is fine. We have a TON of recipes but I just wanted to see what other recipes other people have. I love really anything, especially: nuts (peanut butter included), chocolate, (cream cheese frostings, yum!), pumpkin, etc. Any recipes would be much appreciated :)The best cake/dessert recipe?
Carrot And Pineapple Cake
For the cake:
鈥?2 cups granulated sugar
鈥?1 1/3 cups vegetable oil
鈥?3 extra-large eggs, at room temperature
鈥?1 teaspoon pure vanilla extract
鈥?2 1/2 cups plus 1 tablespoon all-purpose flour, divided
鈥?2 teaspoons ground cinnamon
鈥?2 teaspoons baking soda
鈥?1 1/2 teaspoons kosher salt
鈥?1 cup raisins
鈥?1 cup chopped walnuts
鈥?1 pound carrots, grated
鈥?1/2 cup diced fresh pineapple
For the frosting:
鈥?3/4 pound cream cheese, at room temperature
鈥?1/2 pound unsalted butter, at room temperature
鈥?1 teaspoon pure vanilla extract
鈥?1 pound confectioners' sugar, sifted
For the decoration:
鈥?1/2 cup diced fresh pineapple
Directions
Preheat the oven to 350 degrees F.
Butter 2 (8-inch) round cake pans. Line with parchment paper, then butter and flour the pans.
For the cake:
Beat the sugar, oil, and eggs together in the bowl of an electric mixer fitted with the paddle attachment until light yellow. Add the vanilla. In another bowl, sift together 2 1/2 cups flour, the cinnamon, baking soda, and salt.
Add the dry ingredients to the wet ingredients. Toss the raisins and walnuts with 1 tablespoon flour. Fold in the carrots and pineapple. Add to the batter and mix well.
Divide the batter equally between the 2 pans. Bake for 55 to 60 minutes, or until a toothpick comes out clean. Allow the cakes to cool completely in the pans set over a wire rack.
For the frosting:
Mix the cream cheese, butter and vanilla in the bowl of an electric mixer fitted with the paddle attachment until just combined. Add the sugar and mix until smooth.
Place 1 layer, flat-side up, on a flat plate or cake pedestal. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake. Decorate with diced pineapple.The best cake/dessert recipe?
Hummingbird Cake
Combine:
3 c all purpose flour
1 t soda
1 t cinnamon
2 c sugar
1 t salt
1 1/2 c oil
Beat:
3 eggs and add 1 1/2 t vanilla
Add:
Eggs and vanilla to dry ingredients. Stir ONLY until moistened. DO NOT MIX WITH MIXER. Add 8 oz can crushed pineapple, 2 mashed bananas and 1 c chopped pecans. (Can also add 1 c coconut if desired.) Stir until well blended. Spoon batter into 3 greased and floured 9'; cake pans or a 10'; tube pan. Bake at 350 degrees for 25-30 minutes for the 9'; cake pans and 1 hour and 5 minutes for the 10'; tube pan. Cool in pans for 10 minutes before removing. Cool completely before frosting.
Frosting
8 oz pkg cream cheese
1 box powdered sugar
1/2 c butter
1 t vanilla
Beat until light and fluffy; spread on cooled cake. Sprinkle with coconut and chopped pecans if desired.

Strawberries and Whipped Cream Cake
1 cup butter
1 1/4 cups milk
4 eggs
1/2 teaspoon salt
2 cups white sugar
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon vanilla extract
2 quarts fresh strawberries,
halved lengthwise
2 (8 ounce) packages cream
cheese, at room temperature
1/2 cup white sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
2 cups heavy cream
1. Preheat the oven to 350 degrees F (175 degrees C).
Grease and flour a 9 inch tube pan.
2. In a small saucepan, combine the butter and milk.
Warm until butter has melted, but do not boil.
In a medium bowl,
beat the eggs with
1/2 teaspoon of salt and
2 cups sugar.
Stir in the warmed milk and butter and vanilla.
Combine the flour and baking soda;
stir into the batter just until blended.
Pour into the prepared pan.
3. Bake for 55 minutes in the preheated oven,
or until a knife inserted into the crown of the cake comes out clean. Cool in the pan for at least 15 minutes before removing
and placing on a wire rack to cool completely.
4. In a mixing bowl fitted with a whisk attachment,
combine the cream cheese, sugar, vanilla and salt.
Beat at medium speed until smooth.
Pour the heavy cream in a slow steady stream while the mixture is whipping until the mixture has fluffed up and can hold a stiff peak. Don't let it get grainy looking though.
Scrape the bottom of the bowl with a spatula
occasionally to remove any lumps.
5. Slice the cooled cake horizontally into three layers.
Arrange strawberries on the bottom layer
with the top ends facing outward.
Fill in the remaining space with more berries.
Spoon some of the whipped cream over the berries and spread evenly. Place another layer of cake on top and repeat the process.
Place the top layer on the cake and cover with the remaining cream. Arrange remaining berries over the cream.
