Applesauce Spice Cake Recipe :
(super moist and spicy!! yumm... ;)
1/2 cup (1 stick) unsalted butter, room temperature
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon grated nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 cup sugar
3 large eggs
1/2 teaspoon vanilla
1 cup applesauce
1/4 cup plain yogurt diluted a bit with milk, or 1/4 cup of buttermilk
1/2 cup of chopped walnuts
1/2 cup raisins
how to:
1). Preheat oven to 375掳F. Butter and flour an 8-in square baking pan, set aside.
2). Sift together the flour, baking soda, cinnamon, allspice, nutmeg, cloves, and salt. Set aside.
3). In an electric mixer, beat butter until light, add sugar and beat until fluffy. Add the eggs, one at a time, beating to incorporate after each addition. Add the vanilla and the applesauce and beat until smooth.
4). Mix in half of the dry ingredients. Just before they are blended, add the thinned yogurt (or buttermilk). Then mix in the rest of the dry ingredients, until completely incorporated. Do not over-mix.
5). Pour out the batter into your prepared cake pan. Place in the middle rack of the 375掳F oven and bake for 25-30 minutes, until done. The cake should spring back to the touch, and a toothpick or thin skewer should come out clean after being inserted in various spots in the middle of the cake. Remove the cake from the oven. Let cool for 15 minutes. Then invert to cool completely on a rack.

P.S.: you can make your own aplesauce like this; it's amazing!!
- the lemon juice brightens the flavor of the apples and balances the sweetness...
- if you want chunky applesauce, use a potato masher to mash the cooked apples
- if you prefer smooth apple sauce, run the cooked apples through a food mill.
!!! the key is adding a few strips of lemon peel to the apples while cooking 'cos the lemon heightens the apple flavor.
Applesauce Recipe :
3 to 4 lbs of peeled, cored, and quartered apples. (Make sure you use a good cooking apple like Golden Delicious, Granny Smith, Fuji, Jonathan, Mcintosh, or Gravenstein.)
4 strips of lemon peel - use a vegetable peeler to strip 4 lengths
Juice of one lemon, about 3-4 Tbsp
3 inches of cinnamon stick
1/4 cup of dark brown sugar
up to 1/4 cup of white sugar
1 cup of water
1/2 teaspoon of salt
how to:
1). Put all ingredients into a large pot. Cover. Bring to boil. Lower heat and simmer for 20-30 minutes.
2). Remove from heat. Remove cinnamon sticks and lemon peels. Mash with potato masher.
** Ready to serve, either hot or refrigerated. Delicious with vanilla ice cream or vanilla yogurt.
***Freezes easily, lasts up to one year in a cold freezer.

THIS IS AWESOME!!! You can either make the spread as it suggests or use applesauce/apple butter pre-made from the store. It looks really impressive too.
Granny Ragland's Apple Stack Cake
This recipe ought to make a cake with four layers and enough apple butter for the whole thing. If you want to add layers, add another cake mix and make more spread. (That might be a good idea anyway -- this apple spread makes a delicious topping for toast or English muffins.)
1 box yellow cake mix (which probably will call for a couple eggs and some oil)
For the apple spread (You may also substitute apple butter):
4 cups cooked, dried apples
1 tsp powdered cinnamon
1 tsp ground cloves
1 tsp allspice
1 tsp sugar
Bake the cake according to its directions. Split the batter into a couple cake pans -- or more, based on how many layers you want.
On the stove, cook the apples in 2 cups of water until they are soft. Using a food processor or by hand, mash to the consistency of apple butter. Add cinnamon, cloves, allspice and sugar. Mix well, adding water if necessary to make the apple butter spreadable. Let cool completely.
Once the cake layers have cooled completely, slice in half lengthwise to get thin layers of cake. Spread the apple mixture between each layer and on the top and sides. If time allows, let the cake sit for 24 hours -- slice and serve.

1/2 cup buttermilk
1 1/2 cups applesauce
2 eggs
3/4 cup chopped walnuts
1/4 cup butter
1 cup chopped pecans
4 cups confectioners' sugar
1 (8 ounce) package cream cheese, softened
1 1/2 teaspoons vanilla extract
Serves 18.
Sift flour, white sugar, soda, salt, baking powder, and spices into a large mixing bowl. Mix in 1/2 cup butter or margarine, buttermilk, and applesauce. Beat for 2 minutes with an electric mixer on medium speed. Beat in eggs. Fold in 3/4 cup chopped nuts. Pour batter into a greased and floured 9 x 13 inch pan.
Bake at 350 degrees F (175 degrees C) for 50 minutes.

I have a very easy recipe for applesauce cake.
Things You鈥檒l Need:
* 1 box yellow cake mix
* 1 3/4 c. applesauce
* 3 eggs
* 1/4 c. sugar
* 2 teaspoons cinnamon
# Preheat oven to 350 - grease bundt pan.
# Combine cake mix, applesauce and eggs.
# Pour half of mix in the bundt pan.
Mix 1/4 c. of sugar and 2 teaspoons of cinnamon in a plastic bag. Pour the mixture over the cake mix in the pan. Pour the rest of the cake mix over the sugar cinnamon mixture.
# Cook at 350 for 45 minutes. Let sit in pan for 15 minutes longer. Remove and serve.
Amazin Raisin Cake
3 cups flour
2 cups sugar
1 cup Hellmann's mayonnaise
1/3 cup milk
2 eggs
2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/4 tsp cloves
3 cups chopped peeled apples
1 cup raisins
1/2 cup chopped walnuts
In large bowl with mixer at low speed mix first 10 ingredients 2 minutes scraping bowl frequently or beat by hand 300 strokes. Batter will be very thick. With spoon stir in apples, raisins and nuts. Bake at 350% for 45 minutes or until done. Cool cake and frost.
