I need a good cake-like cornbread recipe ASAP!?

Does anyone know any cake-like cornbread recipes? So far i tried the marie callendars cake like cornbread, and it was ok.


Im looking for cornbread thats not too sweet, and is fluffy like cake, not ';corn mealy'; like the traditional cornbread. Most of the recipes i found, called for cake mix, and i dont have any right now.

1 cup cornmeal


1/2 cup milk


1/2 cup shortening


1/4 cup white sugar


1 1/3 cups cake flour


2 1/2 teaspoons baking powder


1 teaspoon salt


1 egg


1 cup milk





Preheat oven to 350 degrees F (175 degrees C). Grease thoroughly an 8 inch square cake pan.





Combine cornmeal and milk. Sift flour, baking powder, and salt. Stir together the egg and milk.





Cream shortening, and blend in sugar. Stir flour mixture and egg mixture alternately into creamed mixture alternately. Blend in cornmeal mixture.





Bake for 40 to 45 minutes.I need a good cake-like cornbread recipe ASAP!?
Cheese and Dill Cornbread





鈥?3 cups all-purpose flour


鈥?1 cup yellow cornmeal


鈥?1/4 cup sugar


鈥?2 tablespoons baking powder


鈥?2 teaspoons kosher salt


鈥?2 cups milk


鈥?3 extra-large eggs, lightly beaten


鈥?1/2 pound (2 sticks) unsalted butter, melted, plus extra to grease the pan


鈥?8 ounces aged extra-sharp Cheddar, grated, divided


鈥?1/3 cup chopped scallions, white and green parts, plus extra for garnish (3 scallions)


鈥?2 tsp dried dill


Directions


Combine the flour, cornmeal, sugar, baking powder, and salt in a large bowl. In separate bowl, combine the milk, eggs, and butter. With a wooden spoon, stir the wet ingredients into the dry until most of the lumps are dissolved. Don't overmix! Mix in 2 cups of the grated Cheddar, the scallions and dill allow the mixture to sit at room temperature for 20 minutes.


Meanwhile, preheat the oven to 350 degrees F. Grease a 9 by 13 by 2-inch baking pan.


Pour the batter into the prepared pan, smooth the top, and sprinkle with the remaining grated Cheddar and extra chopped scallions. Bake for 30 to 35 minutes, or until a toothpick comes out clean. Cool and cut into large squares. Serve warm or at room temperature.
Yeasted Cornbread








Although this bread contains yeast, it's more of a batter bread and requires no kneading. Masa harina, sometimes labeled corn flour, is the fine yellow cornmeal used to make corn tortillas.








2 cups all-purpose flour


2 cups masa harina


2 tablespoons sugar


1 1/2 teaspoons salt


1 package quick-rise yeast (about 2 1/4 teaspoons)


2 cups warm 1% low-fat milk (100掳 to 110掳)


6 tablespoons butter, melted


2 large eggs, lightly beaten


Cooking spray


Preparation


Lightly spoon flour and masa into dry measuring cups; level with a knife. Combine flour, masa, sugar, salt, and yeast in a large bowl, stirring with a whisk. Add milk, butter, and 2 eggs; stir with a wooden spoon 1 minute or until smooth.





Spread dough into a 13 x 9-inch baking pan coated with cooking spray. Cover with plastic wrap, and let rise in a warm place (85掳), free from drafts, 1 hour or until doubled in size.





Preheat oven to 375掳.





Bake at 375掳 for 25 minutes or until bread is light golden brown and springs back when touched lightly in center. Cool in pan for 5 minutes before serving. Serve warm.








I cut back on the liquid and add a can of Rotel Tomatoes.
Jiffy MIx coats less then a dollar and tastes GREAT. Let set a few minutes after mixing to make it extra fluffy.
