Velvet Crumb Cake





1 陆 cup biscuit mix


陆 cup sugar


1 egg


陆 cup cold water or milk


2 Tbls shortening


1 tsp vanilla





Heat oven to 350%. Grease and flour a square pan 8x8 inches or a round layer pan 9 inches. In a large mixer bowl, blend all ingredients on low speed 陆 minute, scraping side and bottom of bowl frequently. Beat 4 minutes on medium speed. Pour into prepared pan, bake 30 to 35 minutes or until top springs back when touched lightly. Variation: Pineapple Upside Down Cake.





2 Tbls butter

And canned , or fresh pineapple





Melt butter over low heat in pan. Sprinkle with brown sugar. Arrange pineapple slices and maraschino cherries in bottom of pan and pour cake batter over top and bake. Here's a great one, which I have posted before in ';easy'; cake questions:





1 box of angle food cake mix


1 can of lemon pie filling





Mix the dry cake mix with the lemon pie filling. Pour into a greased 9 x 13 baking pan. (I used Pam spray to grease the pan). Bake at 350 degrees for 25 minutes, then start checking it. It should just be starting to brown on the top, particularly around the edges. Don't overcook it.





When you remove it from the oven, allow it to cool for a bit, then you can sprinkle powdered sugar on it, however, it is just as good without the sugar but doesn't look at pretty. This also freezes well so you don't have to feel as though you have to finish it off in a few days!
A super simple one to make, but instead of diet pop, use pureed fruits and add 1/2 tsp baking powder.





Diet pop cake.. a dieters best friend! and it's so yummy.





Take 1 cake mix (any flavor)


Take 1 can diet pop (a flavor to match the cake flavor or compliment it) the kind with splenda in it usually tastes better because it doesn't break down in heat.





Mix the 2 ingredients together and bake according to the package directions.





You can make them into cupcakes or a cake.





Top with some fat free cool whip

I make these up in (2) 8 inch square pans and freeze one cake for later.





Applesauce Spice Cake


(2) 8 to 9 inch cake pans





Preheat your oven to 350*F





Grease two cake pans.





Mix:


2 cups applesauce


1 3/4 cups packed brown sugar (can use half Splenda, half brown sugar)


1 cup oil





Sift:


3 1/2 cups flour


3/4 tsp salt


2 tsp baking soda


1/2 tsp nutmeg


2 tsp cinnamon





Add the applesauce mixture to the sifted mix.





Stir in:


1 cup nuts (optional)


1 cup raisins





Pour the batter into the cake pans.





Bake 35-40 minutes or until a toothpick inserted in the center comes out clean.





After the cakes are cool enough to remove, cool them on cooling racks, otherwise they鈥檒l get soggy.

';No One Will Ever Guess It's'; Low-Fat Carrot Cake


Makes 16 servings


The only fat you'll find here is in the frosting, and even that is a reduced fat recipe. The pineapple is what keeps the cake moist and sweet. Since this is a combination of two different recipes, there isn't an exact calorie count, but each serving clocks in at less than 300 calories and somewhere around 5 grams of fat.





Cake:


2 1/2 c. unbleached flour


1 1/3 c. sugar


2 tsp. baking soda


2 tsp. ground cinnamon


2 8-oz cans crushed pineapple in juice (you will be using both pineapple and juice)


1/4 c. skim or low-fat soy milk


4 lightly beaten egg whites or 1/2 c. egg substitute


2 tsp. vanilla extract


2 c. grated carrots, packed (count on using 5 medium to large carrots)


3/4 c. raisins (golden, regular or a combination of the two)





Frosting:


12 oz. non-fat cream cheese, softened


4 oz. Neufch芒tel cheese or reduced-fat cream cheese, softened


1 tbsp. vanilla


1/2 tsp. lemon extract


1 1/2 c. confectioner's sugar


2 tbsp. chopped, lightly toasted walnuts (optional)





Cake:


Preheat oven to 325 degrees.





In a medium-sized bowl, mix dry ingredients - flour, sugar, baking soda and cinnamon. Blend well.





Stir in pineapple and juice, milk, egg whites or substitute and vanilla extract. Lastly, fold in the carrots and raisins.





Cover the inside of a 9x13-inch baking pan with cooking spray.





Evenly spread the batter and bake for 35 minutes, or until a wooden toothpick inserted in the center comes out clean (it's always best to go with the toothpick test, by the way).





Remove from oven and let cool.





Frosting:


Take a medium mixing bowl and blend the cream cheese, Neufch芒tel, vanilla and lemon extract. Beat until smooth with an electric mixer. Stir in the confectioner's sugar, and then beat until mixture is smooth.





Spread over cooled cake. Refrigerate the leftovers.

Adapted from several sources: this cake is a classic.


This cake gets its name from its proportion of ingredients: 1 cup butter and milk, 2 cups sugar, 3 cups of flour and 4 eggs, and from cupcakes to layers cakes, as a basic, white cake, it does not fail.





Makes (3) 9-inch layer cake or 24 cupcakes


1 cup (2 sticks) butter, at room temperature (or 1/2 cup margarine, 1/2 applesauce)


2 cups sugar (or 1 cup sugar, 1 cup Splenda)


4 eggs (or 1 cup Egg Beaters, egg substitute)


3 cups sifted self-rising flour*


* Self-rising flour has both salt and baking powder in it, but you can make your own at home with the following formula: 1 cup self-rising flour = 1 cup all-purpose flour, minus 2 teaspoons + 1 1/2 teaspoons baking powder + 1/2 teaspoon salt.





1 cup milk (or non-fat milk, I have used powdered milk, made extra rich by adding more powder mixed with filtered ice cold water)


1 teaspoon pure vanilla extract





Preheat oven to 350掳F.





Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes.





Add eggs, 1 at a time, beating well after each addition.





Add flour and milk alternately to creamed mixture, beginning and ending with flour.





Add vanilla and continue to beat until just mixed.





Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4-inches above counter, then dropping flat onto counter. Do this several times to release air bubbles and assure you of a more level cake.





Bake for 25 to 30 minutes or until a tester or toothpick inserted into the center comes out clean (start checking at 15 minutes if you are making cupcakes).

its a bit fattening sorry but so good. half the recipe so you eat less maybe.
Try any cheese cake or milk tart :) google it and your sure to find loads of recipes. cheese cakes consist of 180-380 calories per a slice and milk tar is 230 calories per a slice.
